Fat Camp Friday # 44: Key Lime Pie Ice Cream

I’m sorry ladies and gentlemen. You are going to have to hunker down in the kitchen all day to make this one happen. There is just no way around it. Okay, I’m kidding. I can’t even say it with a straight face. Much like my Simple Vanilla Ice Cream, this is just as easy. I have been sitting on this one for quite some time now and I have finally made it. Sweet, tart, vanilla wafer heaven. Yes, vanilla wafers. Brace yourselves for the recipe.
You could alternately use graham crackers for this recipe. You could also bake a crust (or purchase pre-made) using 1 cup crumbs, 1/4 c butter and 2 T sugar. Bake at 375 for 10 minutes, cool and then break into pieces.
Ingredients
- 1 1/2 cups whole milk
- 3/4 cup key lime juice, fresh or bottled
- 1/2 cup heavy cream
- 1 14 oz can of sweetened condensed milk
- 1 cup vanilla wafers, crushed into medium pieces
- lime zest
- 1 oz semi-sweet chocolate, finely chopped
- vanilla wafer crumbs
Directions
- In a large bowl, stir together the milk, key lime juice, heavy cream, and condensed milk.
- Pour into your ice cream maker and make according to your ice cream makers directions.
- 5 minutes before the ice cream is done add the vanilla wafer pieces.
- Remove from your ice cream maker bowl and place in a freezer safe container.
- Place in the freezer until firm.
- To serve, garnish with zest, chocolate shavings and wafer crumbs.

Hi Miranda, The ice cream looks amazing. Key lime is one of my favorite dessert flavors. Now I need an ice cream maker. I tried making it my hand and it never turns out as nice. But any excuse to buy new gadgets is ok by me!
