Watermelon Mint Coolers

 

It’s a hot day. You are sitting on a beach yearning for a drink. Something that will cool you off.

Maybe some fruit will do the trick.

Apple? Nah. Banana? Def not.

Oh, but you really do need that drink.

Rum is always a good call. Toss some watermelon in there for that refreshment factor.

Get yourself a Watermelon Mint Cooler.

Crisp, cool watermelon. A little rum for a kick. Sparkling water for a refresher.

Relax.

Invite a friend. I think they would like one too.

 

Watermelon Mint Coolers

Kitchen Notes:

  • Pretty much any sweetener of your choice would work with this drink, from granulated sugar to agave nectar, as long as you know how to adjust the substitutions.
  • You do not need a melon baller for this recipe! Who has those anyways? Just use a teaspoon to get those ball shapes out of your melon.
  • I love to let the melon balls soak in the drink for a while before eating them. Gives you a nice refreshing burst of rum at the end.

 

Watermelon Mint Coolers

Serving Size: 1 - 6 oz glass

Ingredients

    Mint Simple Syrup
  • 1/2 cup brown sugar
  • 1/2 cup water
  • mint leaves, bunch
  • Mint Coolers
  • 3 oz rum
  • 6 oz simple syrup
  • 2 oz Perrier or club soda
  • watermelon (shaped into teaspoon-sized melon balls)
  • juice of 1 lime
  • mint leaves, for garnish
  • lime wheels, for garnish

Directions

  1. Simmer the sugar, water and mint leaves in a sauce pan for five minutes until sugar is melted and mint flavor is infused. Remove from heat and let cool.
  2. Fill two glasses with ice. In each, add 1.5 oz rum, 3 oz syrup, top off with 1 oz club soda or sparkling water and juice of 1/2 lime. Toss in a few melon balls and garnish with a lime wheel and sprig of mint.
