Vegan Sugar Cookies

 

You know you’ve got a great cookie on your hands when the batch doesn’t even make it to the cookie jar. Half of them never finish cooling. The other half gets devoured before they reach their final destination.

Such is the magic of a simple sugar cookie.

We all know what a sugar cookie consists of don’t we? Butter. Sugar. Some eggs. Some flour. Maybe a couple of other ingredients thrown in. Totally fun, totally delicious, but not vegan.

I found this recipe and had to give it a try. No eggs, no butter, but still completely fun and absolutely delicious!

Soft and perfect, top them with icing or sprinkles.

Gotta love this time of year for sugar cookies. Such a great gift to give away – Be happy knowing these are also cholesterol free and vegan!

Vegan Sugar Cookies

Adapted from Oh, Lady Cakes

Ingredients

  • 1/2 cup vegan butter (like Earth Balance)
  • 1/2 cup cane sugar
  • 1 tsp pure vanilla extract
  • 3 tbsp vegan sour cream
  • Pinch of salt
  • 1/4 tsp baking soda
  • 1 1/4 cups unbleached flour

Directions

  1. Preheat oven to 350˚F. Line a large baking sheet with a silicon mat or parchment paper; set aside.
  2. In a large mixing bowl of a stand mixer (or use a hand mixer), cream the butter, sugar, vanilla extract and sour cream for 1-2 minutes, or until light and fluffy.
  3. Mix in the salt, baking soda and flour; beat just until combined. Using a tablespoon, drop the dough onto the prepared baking sheet. Sprinkle with sanding sugar, if desired. Bake at 350˚F for 9-11 minutes. Allow to cool on baking sheet for 5 minutes then transfer to a cooling rack.
  4. Store in an air tight container for up to five days (if they last that long!).
