Valentine’s Day Sugar Cookies

If you need a last minute recipe for sugar cookies for Valentine’s Day, this is it! You can’t go wrong with this one because this is the way sugar cookies were intended to be. A little crisp on the bottom, big, soft, chewy goodness everywhere else. Let’s not forget that slight twinge of kosher salt on the finish.

You know those bakery sugar cookies that seem like they come from a completely different planet and seem almost impossible to replicate? These come pretty darn close. The best thing about these is their simplicity and no need for refrigeration.

Sugar Cookies
Adapted from Allrecipes
  • 1/3 cup shortening
  • 1 cup butter, softened
  • 1 1/2 cups white sugar
  • 2 eggs
  • 2 teaspoons vanilla extract
  • 3 1/2 cups all-purpose flour
  • 2 teaspoons baking powder
  • 1 teaspoon kosher salt
  • 1/3 cup granulated sugar (or sprinkles) for decoration

Preheat oven to 350 degrees F (175 degrees C).

In a medium bowl, cream together the butter, shortening and sugar. Stir in the eggs and vanilla. Combine the flour, baking powder and salt, stir into the creamed mixture until dough comes together. Roll dough into walnut sized balls (or roll out and shape with cookie cutters) and roll the balls  in sugar or sprinkles. Place them on a parchment lined cookie sheet about 2 inches apart.

Bake cookies 10 to 12 minutes in the preheated oven, until bottom is light brown. Remove from baking sheets to cool on wire racks.
