Steak and Onion Sandwiches {Cookbook Challenge}
Talk about an easy recipe! Man, one thing I will give this Martha Stewart cookbook is that all of the recipes I have tried so far have been super easy and so quick! 45 minutes or less is my kind of meal. Not that I don’t like the labor of cooking, but every once in a while I like to be guaranteed quick and easy and so far, her cookbook title has not let me down.
In case you are just joining me in my cookbook challenge, I am cooking through some old cookbooks and trying some new recipes. Starting with my Martha Stewart, Everyday Food, I am dusting them off and hoping to find some great family favorites.
This is one that my husband liked and I will be adding it to the rotation. So far, Martha has definitely lived up to her “Great Food Fast” title.
What I did differently? Added mushrooms and crushed red pepper. Oh yeah, gotta have some heat.
Steak and Onion Sandwiches
3 tablespoons olive oil
2 medium onions, sliced into 1/2-inch-thick rings
Coarse salt and ground pepper
4 minute steaks, (3 ounces each)
2 tablespoons Worcestershire sauce
Toasted country bread
Heat 2 tablespoons olive oil in a large skillet over medium-high heat; cook onions until browned, tossing occasionally, 10 to 15 minutes. Season with salt and pepper; remove.
Heat remaining tablespoon oil in same skillet over high heat. Season steaks with salt and pepper. Cook 30 seconds on each side; remove. Add Worcestershire sauce and 2 tablespoons water to skillet, scraping up browned bits with a wooden spoon. Return onions to skillet; toss.
Sandwich steak and onions between toasted bread.
