Ritz Peanut Butter S’mores

This is a recipe I submitted for the Ritz Recipe Challenge. While I wait to find out who the finalists are, I thought I would share it with you and give you the link so you can go rate it. I didn’t have a lot of time to think of a recipe (1 day actually), but Ritz crackers are so versatile, I thought I would give it a go. What do you think?


Very simple, but if you plan on making a lot, you may want to invest in some help – set up an assembly line! Start with a set of Ritz crackers and top each with a little peanut butter. Line one side with mini marshmallows (cut in half), then top with some melted chocolate and sandwich them together. Chill for about 10 minutes to let the chocolate harden.




Alternately, you could melt the marshmallows (or use fluff), and instead of doing the chocolate on the inside, dip them in melted chocolate. Place on wax paper to rest or let harden in the refrigerator if you need them sooner. Equally good both ways, but if you want to make them seem fancier – dipping them is the way to go!



Ritz Peanut Butter S’mores

24 Ritz Crackers 
48 or about 1 cup mini marshmallows 
1 cup chocolate chip morsels 
1/4 cup creamy peanut butter



In a microwave safe bowl, heat the chocolate chips about 1 – 1.5 minutes until mostly melted. Remove from microwave and stir until completely melted.
Lay out all of the crackers in a single layer.
Cut all mini marshmallows in half.
Spread 1/2 tsp of peanut butter on each Ritz cracker.
Place 8 marshmallow halves on 12 of the crackers in a single layer.
Top marshmallow halves with 1 tsp of melted chocolate and then finish off with a peanut butter cracker.
Chill in the fridge for 10 minutes until chocolate is firm.
*Alternately, dip the assembled Ritz cracker in melted chocolate.
