Peanut Butter Chocolate Chunk Popcorn
It is perfectly acceptable for someone to eat an entire bag of popcorn alone.
Right?
I guess except for when that popcorn is covered in peanut butter, honey, sugar and chocolate. Not so acceptable now is it? I couldn’t help myself – that bowl of goodness kept calling my name! I don’t need your disapproving thoughts…
I need a treadmill.
When Planters sent me two jars of their new peanut butter to create a snack with, I went through a couple of trial recipes and tons of ideas. I love peanut butter. I love this peanut butter. With minimal ingredients and no filler, it tastes like…uh…peanuts! Fresh. Roasted. Peanuts. Imagine that. After a couple spoonfuls and a thumbs up from the Munchkin, This is what I decided on. Adapted from The Kitchn.
Ingredients
- 1 bag of popped popcorn
- 1/2 cup honey
- 1/3 cup sugar
- 1/2 cup creamy peanut butter
- 1 teaspoon vanilla
- 1 - 2 ounces chocolate (depending on how chocolatey you would like it), chopped
- peanuts or pretzels for mixing in (optional)
Directions
- Melt sugar and honey together in a small saucepan over low heat until sugar is dissolved.
- Add peanut butter and stir until well blended. Stir in vanilla.
- Mix peanut butter mixture with popcorn in a large bowl and let cool for 5 minutes before adding chopped chocolate. Be sure there are no kernels in the popcorn before mixing.
- Let mixture cool completely and store in an airtight container.

Jenna, it is crunchy after you let it cool. Then you have to store it in an airtight container to keep that crunch – otherwise it will soften if left out.
