Emeril’s Kicked-Up Sandwich #6: Peanut Butter, Banana & Honey
I was chosen along with 20 other bloggers to participate in a cook-along of Emeril’s soon to be published cookbook, Kicked-Up Sandwiches. Over the next 3 weeks, we will each cook up some delicious looking sandwiches of our choice (at least twice a week). We were given the okay to cook and discuss whatever dishes we want, but only a few recipes were given the okay to publish in their entirety. Have this killer sandwich whenever you want to – and don’t give anyone any excuses why. I had mine for breakfast. Why not? It’s got everything you need.
Mise en Place
Thanks to Elvis, most of us have heard of a peanut butter and banana sandwich. But there is something special about grilling this combination. The peanut butter starts to melt ever so slightly. The honey oozes, just a little bit. The bananas become warm and take on the ever loved ripened banana flavor.
Yeah, you can’t go wrong with this one.
Kitchen Notes:
- An easy way to grill sandwiches in the pan: Don’t bother spreading butter on both sides of the outside of the sandwich. Just put a couple teaspoons of butter in the pan, let it melt, then add your sandwich. When it is time to flip – repeat!
- If you love peanut butter, lather it on!

Beautiful sandwich! I tend to do what you do, too, on throwing the butter in the pan instead of buttering the bread. So much easier and no waiting for it to soften to a spreadable consistency!
So easy! Less time, and I am sure you end up using less butter that way too.
