Mango Watermelon Rummy {w/ Sweet’N Low}
Yes, I am using a lot of watermelon this summer. What can I say except it’s awesome! Not only is it awesome just for snacking, you can make some great drinks out of it – like Watermelon Lemonade, Watermelon Mint Coolers, and these Mango Watermelon Rummies.
Ever had “the pink stuff”? You know, the sugar substitute packet that is unmistakably Sweet’N Low? I was never a big fan of these sweeteners, but I was offered a chance to try them and give a go at making a drink (which I would never have thought to use a sweetener for drinks), and I thought ‘What the heck, why not’?
I had a watermelon and a mango and came up with this creation on a whim. Although both of these fruits are naturally sweet, I added the Sweet’N Low packet to the watermelon purée and was pleasantly surprised. I did not taste a “sweetener” per say, but it was more like it picked up on and enhanced the natural sweetness of the watermelon.
This drink is super easy to make and it only has 4 ingredients for pete’s sake! The mango and the rum make a nice daiquiri-like combination while the watermelon and Sweet ‘n Low leave you with a nice refreshing finish. Of course you could also swirl the two layers together, which not only makes for a pretty drink, but a new flavor combination.

Kitchen Notes:
- Light or dark rum works well with this recipe.
- You can drink the layers separately or swirl them together.
Ingredients
- 1 whole mango, seeded and diced
- 1.5 oz rum
- 3 slices seedless watermelon, diced
- 1 packet Sweet 'n Low
- mango and/or watermelon wedges, for garnish
Directions
- In a blender, blend the mango cubes until puréed. Pour in the rum and give another quick mix. Pour 4 oz into a serving glass.
- Rinse out the blender and add the watermelon and Sweet 'n Low. Blend the melon until liquified.
- Using the back of a spoon, layer 3 oz watermelon mixture on top of the mango mixture. This should be easy since the watermelon will have more of a smoothie consistency.
- Garnish with watermelon and mango wedges and serve with a straw.
