It’s National Fortune Cookie Day! {Accomplished Cook}

It is with good fortune that I bring you this easy recipe for homemade fortune cookies! The great thing about these is that not only are they fun, but you easily have all of the ingredients in your pantry right now. If you do not have almond extract, just double the vanilla.
It may take a couple tries to get used to the process, so you may easily double the recipe to account for initial error.
Ingredients
- 1 egg white
- 1/8 teaspoon vanilla extract
- 1/8 teaspoon almond extract
- 2 Tablespoons butter, melted
- 1 pinch salt
- 1/4 cup unbleached all-purpose flour
- 3 Tablespoons white sugar
Directions
- Preheat oven to 350 degrees F. Butter or spray 2 cookie sheets. Alternatively, you could use parchment paper or a silicone baking sheet. Write fortunes on strips of paper about 4 inches long and 1/2 inch wide.
- Mix the egg white, almond and vanilla until foamy but not stiff.
- Add the butter. Sift the flour, salt, and sugar and blend into the egg white mixture. Consistency will be like a runny pancake batter.
- Place teaspoonfuls of the batter at least 4 inches apart on one of the prepared cookie sheets. Use the back of a spoon to move the batter into round shapes about 3 inches in diameter.
- Be careful to make batter as round and even as possible. Make about 4 cookies per batch. The cookies have to be really hot to form them and once they cool it is too late, so work quickly.
- Bake for 5 - 6 minutes or until cookie has turned a golden color 1/2 inch wide around the outer edge of the circle. The center will remain pale. While one sheet is baking, prepare the other.
- Remove from oven and quickly move cookie with a wide spatula and place upside down on a wooden board. Quickly place the fortune on the cookie and fold the cookie in half. You should have a semi-circle. Fold in half again, being careful to keep the shape of a traditional fortune cookie.
- Place folded cookies into the cups of a mini muffin tin or egg carton to hold their shape until firm.
- Enjoy!
