Emeril’s Kicked-Up Sandwich #7: Heirloom Tomato Sandwich
I was chosen along with 20 other bloggers to participate in a cook-along of Emeril’s soon to be published cookbook, Kicked-Up Sandwiches. Over the next 3 weeks, we will each cook up some delicious looking sandwiches of our choice (at least twice a week). We were given the okay to cook and discuss whatever dishes we want, but only a few recipes were given the okay to publish in their entirety. This is yet another simple, yet “kicked up” sandwich that everyone will love. Fresh, ripe tomatoes are the star of this sandwich, so tomato lovers will be in heaven!
Mise en Place
Simply stated: delicious. And if you want to pack on more flavor, toss on a creamy avocado or some crispy bacon! Dress it up how you like it, you can’t miss with this one.
Kitchen Notes:
- Be sure to use fresh, in-season tomatoes for this one as this sandwich is clearly all about the tomatoes!
I also made Emeril’s Garden Burger with Cranberry Chutney and Smashed Chickpeas on Naan with Cilantro Mint Chutney (pictured below) sandwiches. I can honestly say that everything we tried was great – and that doesn’t happen very often. Emeril has left out nothing in this book. You can find recipes for classic sandwiches, subs, grilled, open-faced, wraps, breakfast and dessert sandwiches. It doesn’t stop there – he includes plenty of recipes for breads, sauces and chutneys as well! This is one cookbook I will continue to cook from, I can’t wait to get my hands on the sweet sandwiches! Desserts, here I come!
