You Will Like Green Eggs and Ham. You Will Like Them, Sam I Am!
“I do not like them in a house. I do not like them with a mouse. I do not like them here or there. I do not like them anywhere.”
If Sam I Am had my green eggs and ham on that plate, he wouldn’t have been running around all over town trying to give away samples. They would be gone before he could utter the sentence “Do you like green eggs and ham?”
The incredible, edible egg. That is the subject of this month’s Kitchen Bootcamp with My Kitchen Addiction. In honor of Dr. Seuss’ birthday on March 2nd and the National Education Association (NEA) ‘Read Across America’ event, I decided to make my version of Green Eggs and Ham. The perfect fried egg atop an english muffin and center-cut ham, paired with a walnut pesto. Take that Dr. Seuss.
Mis en Place:
Freakin’ delicious! The walnut pesto has a sharp bite that counters well with the mild, runny egg. A medley of flavors that are light enough for breakfast, but could take on brunch as well. Freakin’ delicious! I first made this walnut pesto with a Corn Soup for Valentine’s day and I realized it would go very well with something like this. I was right.
“Say! I like green eggs and ham! I do! I like them, Sam-I-am!”
Kitchen Notes:

- I made walnut pesto, but the traditional pine nut pesto should work well also.
- This is a total kid friendly dish, but fry the eggs hard and leave off the pesto if they are not hip to it and add the food coloring.

Ingredients
- 1 english muffin, split
- 4 ounces center cut ham steak
- 1 egg
- 1/2 c shelled walnuts
- 1 clove garlic
- 3 T grated parmesan
- 1/2 cup extra-virgin olive oil
- salt
- cracked black pepper
- 10 fresh basil leaves
Directions
- Combine all ingredients except basil in a food processor and puree until smooth. Add the basil and puree quickly. Season with salt and pepper to taste. Refrigerate until needed.
- Toast the english muffin, brush with butter or margarine and set half on a serving plate. Warm a skillet to medium heat and fry the ham steak, just until warmed through. Remove from pan and place on top of the open-faced english muffin.
- Wipe the pan clean and bring back up to medium heat. Spray with cooking spray or add a tablespoon of butter and swirl when it melts. The pan is hot enough if your butter bubbles a bit. Crack one egg into the warmed pan and let it cook until the white sets. This will only take a few minutes. If your pan is too hot (the bottom is cooking too quickly), turn the heat down and cover it so that the top of the whites will solidify quicker.
- Slide your fried egg onto the ham and english muffin and top with a tablespoon of the walnut pesto.

I am going to have to try this. Pine nuts are hard to find out of season. Walnuts you can use anytime. I love that. I will have to test it and see how it tastes. Thanks for sharing with us.
