Fat Camp Friday #42: Simple {No Egg} Vanilla Ice Cream
Who says ice cream can’t be easy. Who says easy can’t be creamy? Not me. Here is my recipe for a simple (and by simple, I mean super easy), creamy (and by creamy I mean you are not going to get those stupid ice crystals), vanilla ice cream.
Wait. Don’t be alarmed! This recipe only has 4 ingredients, no heated cook time, and super simple directions.
This simple recipe makes a super creamy vanilla that works as the base for many delicious recipes. Enjoy!
Ingredients
- 2 cups half and half
- 1 cup cream
- 3/4 cup sugar
- 1 Tablespoon vanilla
Directions
- Mix 1 cup of the half and half with the sugar until all sugar is dissolved.
- Add the remaining ingredients and mix well.
- Freeze ice cream in ice cream maker, according to manufacturer's directions.
- After the recommended 25 minute churn time, ice cream will be soft. Transfer to a freezer safe container and freeze another 1 - 2 hours to get desired ice cream consistency.

Kim, if you don’t have an ice cream maker and don’t mind a little extra work, Check out this tutorial from David Lebovitz for step-by-step instructions of doing it without a machine. Although I have not tried it this way, so I can’t promise less ice crystals.

That ice cream looks delicious! SO easy. What if I don’t have an ice cream maker.
If you don’t have an ice cream maker, you can put it in your freezer safe container and just stir it every 30 minutes or so until it freezes. That way you will still be “churning” it to reduce ice crystals, you just have to do it manually. Check out this tutorial from David Lebovitz if you need step-by-step instructions.

And if you want to make it even more natural, use real vanilla beans instead of extract!
