Fat Camp Friday #39: Brown Sugar Bacon Jalapenos

Bacon. Brown Sugar. Cream Cheese. Cheddar Cheese. Jalapenos. Yum.

Start with some fresh jalapenos. If you want to cut down the spice, I hear the bigger they are, the less spicy. So start with the bigger ones and go from there.

Make sure you take out the seeds and membranes. Unless you want it super spicy of course. Then in that case, have at it.

The first batch, I did not pre-cook the bacon. Quite frankly, I am not a fan of the flabby, not completely cooked bacon you get on poppers. Also, if you have large jalapenos and want a good hold, use one full piece of bacon per half. Otherwise, if you have smaller jalapenos, cut each piece of bacon in half and use one half piece of bacon for each jalapeno half. Cook the bacon a few minutes on a wire rack before you wrap the jalapenos in order to get a more firm hold.

Brown Sugar Bacon Jalapenos

Prep Time: 15 minutes

Cook Time: 20 minutes

Total Time: 35 minutes

Yield: 12 poppers

Serving Size: 2 poppers

Don't let the "jalapeno" scare you off. The combination of flavors lessens the heat from even the more spicy pepper.

Ingredients

  • 6 jalapeno peppers
  • 4 ounces PHILADELPHIA Cream Cheese, softened
  • 2 tablespoons shredded cheddar cheese
  • 6 - 12 bacon strips (depends on the size of your jalapenos)
  • 1/4 cup packed brown sugar
  • 1 teaspoon dijon mustard

Directions

  1. Pre-heat oven to 350°.
  2. Cut jalapenos in half lengthwise and remove seeds and membranes; set aside. In a small bowl, beat cheeses until blended. Spoon into pepper halves.
  3. Meanwhile, combine brown sugar and mustard. Spread onto one side of the bacon strips and place the strips on a wire rack over a cookie sheet. Place foil or parchment on the cookie sheet for easier clean-up. Bake for 5 minutes.
  4. Remove bacon from oven and let cool about 5 minutes before wrapping the jalapenos.
  5. Wrap a half (or whole) strip of bacon around each pepper half.
  6. Place peppers on wire rack.
  7. Bake at 350° for 15-20 minutes or until bacon is firm. Yield: 1 dozen.
