Fat Camp Friday #39: Brown Sugar Bacon Jalapenos
Bacon. Brown Sugar. Cream Cheese. Cheddar Cheese. Jalapenos. Yum.
Start with some fresh jalapenos. If you want to cut down the spice, I hear the bigger they are, the less spicy. So start with the bigger ones and go from there.
Make sure you take out the seeds and membranes. Unless you want it super spicy of course. Then in that case, have at it.
The first batch, I did not pre-cook the bacon. Quite frankly, I am not a fan of the flabby, not completely cooked bacon you get on poppers. Also, if you have large jalapenos and want a good hold, use one full piece of bacon per half. Otherwise, if you have smaller jalapenos, cut each piece of bacon in half and use one half piece of bacon for each jalapeno half. Cook the bacon a few minutes on a wire rack before you wrap the jalapenos in order to get a more firm hold.
Think of me during football season. You’re welcome.
Don't let the "jalapeno" scare you off. The combination of flavors lessens the heat from even the more spicy pepper.
Ingredients
- 6 jalapeno peppers
- 4 ounces PHILADELPHIA Cream Cheese, softened
- 2 tablespoons shredded cheddar cheese
- 6 - 12 bacon strips (depends on the size of your jalapenos)
- 1/4 cup packed brown sugar
- 1 teaspoon dijon mustard
Directions
- Pre-heat oven to 350°.
- Cut jalapenos in half lengthwise and remove seeds and membranes; set aside. In a small bowl, beat cheeses until blended. Spoon into pepper halves.
- Meanwhile, combine brown sugar and mustard. Spread onto one side of the bacon strips and place the strips on a wire rack over a cookie sheet. Place foil or parchment on the cookie sheet for easier clean-up. Bake for 5 minutes.
- Remove bacon from oven and let cool about 5 minutes before wrapping the jalapenos.
- Wrap a half (or whole) strip of bacon around each pepper half.
- Place peppers on wire rack.
- Bake at 350° for 15-20 minutes or until bacon is firm. Yield: 1 dozen.

I’ve never had a popper made that way but these look pretty good.
How do you make your poppers? Always up for new versions!
The ones I usually eat are filled with cheddar, dipped in an egg wash and coated in breadcrumbs then deep fried. I normally only get them when I eat out so it’s not often.
I have never had one made like that – sounds good, I’ll try i t.
Miranda,

Quick question, I added your FCF button to my blog but I’m not sure where to paste the html so when if someone clicks on it, it would bring me to the FCF posts. Help!
If you copy the html from the code box (under the button) and place that in your blog, the photo will show up and when someone clicks it, they will go to the page. In other words, instead of copying the picture of the button, copy the html and put that code where you want to on your site. Let me know if you need help doing it!
These look really, really, really good. Gotta Try these.
Please do, thanks for stopping by!!
Thank you so much for hosting
I’m pinning those bacon jalapenos. They look fantastic
Thanks Ali!
ummm…so glad you stopped by so that now I can follow you.
We eat these regularly…but have NEVER even HEARD of using brown sugar. Gotta give this a try.
We cook them on the grill and, boy, are they ever good.
I’m pinning those good lookin’ peppers.
xo bj
Mmmm, on the grill sounds fabulous! I bet that gets the bacon nice and firm! Thanks for stopping by and linking up!
WoW! Looks tastey! Can’t wait to try them out!
Thanks Susie!
I’ve been asking every single blogger this as I see a jalapeno recipe. When I cut up jalapenos I cannot get the oil off of my fingers. Even after washing my hands with soap 5 times, using lemon, vinegar…. at night when I take out my contacts it burns my eyes. Any thoughts??? And this looks lovely!
Elsa, I usually don’t have too bad a problem with the spice, but if it does tend to bother you, try wearing a pair of gloves while you handle the peppers. That should help minimize the amount that get on your hands and then you should be able to get of anymore (if there is any) pretty easily. Thanks for stopping by!
Thanks for the invite! I hope I’m not to late with my post.
What a great blog you have here!!
For some reason I can’t get your FCF button to work.
Is there actual html code for it anywhere? I’m on WP, so I can’t cut and paste it on.
Courtney, You can find it HERE.
Not too late Courtney, thanks for linking!
OH EMM GOODNESS! These look spectacular, Miranda! I am adding these to my to do list! Thanks for bringing to Friday Potluck this week!
Thanks for hosting Erin! Hope you get to try them.
I love the addition of the brown sugar to the bacon!!!!
Thanks!
