I have told you plenty of times that sweets hold a special place in my heart, and especially my stomach. Bring me something sweet, I will try it at least once. Movie time brings no exception. While looking for something to snack on during family movie night, I was craving a sweet popcorn. I quickly jumped online to find a caramel popcorn recipe and found Grandma Paul’s Caramel Corn by Paula Deen.
This is so easy, you probably already have everything you need. Start with 2 bags of popped popcorn. Make sure you check out my video for an easy way to get those un-popped kernels out of your popcorn. This recipe can easily be halved if you are only making one bag of popcorn, but if there are other people around, you’ll regret it if you don’t make two.
Heat up the ingredients to make the caramel, and when it is done, toss with the popcorn. Dry in the oven for 30 minutes and you’re done. You will not believe how awesome this is. The buttery caramel and a hint of salt in the background go together beautifully! Try not to eat it all in one sitting.
Caramel Popcorn
1 cup butter
2 cups packed brown sugar
1 tsp salt
1/2 cup light corn syrup
1 tsp vanilla
1 tsp baking soda
Preheat oven to 300 degrees F. Combine first 4 ingredients and boil for 5 minutes. Remove from heat, stir in vanilla then baking soda. Mix well. Coat popcorn well and spread onto a roasting pan or a sheet pan and bake in oven for 30 minutes. Turn frequently to prevent burning. Spread on waxed paper to dry completely.
