What happens when you put almost everything you love on a pizza? You get a darn good pie. What you don’t see in the name is that I also put tomato slices and garlic on it. In the words of Rachael Ray: Yummo!
Instead of a traditional red sauce, I used pesto. Then I topped it with tomato slices.
Top with 2 kinds of cheese, roasted garlic and crumbled bacon. Can we say OMG? I guarantee you will love this one – and if you don’t, you can come to my house and make me one that I will love.
Pesto, Basil, Bacon Pizza
pizza dough
1/4 – 1/2 c pesto
1 tomato, sliced
1/2 c mozzarella cheese
1/2 c gruyere cheese
5 cloves garlic
4 sliced bacon, cooked and crumbled
basil, julienned for garnish
optional:
parmesan cheese, for garnish
red pepper flakes, for garnish
Preheat oven to 500 degrees F.
Roast garlic cloves in 1 tablespoon of olive oil in a skillet over low heat until soft. Set aside to cool until needed and reserve the garlic oil for later use.
Form your
favorite pizza dough (I have tweaked my recipe and will be posting soon) into a 12 inch round and evenly spread pesto on top.
Place tomatoes on top in a single layer, followed by cheeses, garlic, bacon and basil.
Bake 8 – 11 minutes, basting crust with garlic oil halfway through cooking. Bake until cheese is melted and crust is slightly crisp.
