Fat Camp Friday #23: Oreo Stuffed Lemon Cookies

Are you ready for something sweet? In true Fat Camp Friday Style, I am bringing you a nice little cookie treat. Golden Oreos stuffed inside a lemon cookie with more Oreos crushed on top – muffin tin style. Yum. Not as rich as some of the other stuffed cookies out there and you can pop them by the handful if you aren’t careful.

I must say that regular Oreos are not my favorite, although I do love them chopped up in ice cream and cake! Golden Oreos though, I could eat them all day long. For this recipe, we are going to stuff one of these oreos into a soft lemony cookie.

To make them in a muffin tin (just simply because I like form), place a piece of parchment paper on the bottom of the tin, place a little lemon cookie dough, and top it with half of an Oreo. Top it with more cookie to seal it and crush the remaining oreo cookie on top. This recipe is so easy.

Golden Oreo Stuffed Lemon Cookies

24 Golden Oreos
  • 2 cups all-purpose flour, (spooned and leveled)
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 tablespoon finely grated lemon zest, plus 2 tablespoons fresh lemon juice
  • 1/2 cup (1 stick) unsalted butter, room temperature
  • 1 cup granulated sugar
  • 1 large egg
  • 1 teaspoon pure vanilla extract
  • Lemon Glaze*

  • Preheat oven to 350 degrees. In a medium bowl, whisk together flour, baking soda, salt, and lemon zest. In a large bowl, using an electric mixer, beat butter and granulated sugar until light and fluffy. Add egg, vanilla, and lemon juice and beat until combined. With mixer on low, beat in flour mixture.

  • Place a piece of parchment paper on the bottom of a muffin tin, place a little lemon cookie dough on the bottom, and top it with half of an Oreo. Top it with more cookie to seal it and crush the remaining oreo cookie on top. Bake until edges are golden, 8 to 10 minutes. Let cool 2 minutes in tin, then transfer cookies to a wire rack to cool completely. Drizzle cookies with Lemon Glaze and let set, about 1 hour.

*Lemon Glaze: 2 cups confectioners’ sugar, 2 tablespoons lemon zest, 1/3 cup frech lemon juice. Whisk together in a small bowl until smooth.
