Whole Wheat Honey and Goat Cheese Drop Biscuits {Joy the Baker Spotlight}

1
February 22, 2012

Goat Cheese Biscuits
Goat cheese.

Creamy. Tangy. Sweet. Savory. Ever so delightful. Mix in many things, pair with many options. The possibilities are endless. Enter Whole Wheat Honey and Goat Cheese Drop Biscuits. Goat cheese for breakfast. A little sweetness of honey sets it off. I accidentally bought honey flavored goat cheese, but imagine my surprise when I noticed that the recipe called for honey! This biscuit is a nice change from the Southern breakfast norm we all know and love. A replacement? Maybe not, but it’s great to throw in a curveball every once in a while.

Mini Chamomile Cakes w/ Honey Frosting {Joy the Baker Spotlight}

February 21, 2012

Chamomile Cakes

Whenever I have an excuse to have baked goods for breakfast, I’m all over it. Anything made with coffee or tea is totally justifiable to eat in the morning. It’s okay. Go ahead and use that rule – I promise it works. So even though these are called mini cakes (which are simply cupcakes), I am going to call them muffins around here. Because really, cupcakes are nothing but muffins with frosting. Minor technicality.

Soufflé Omelette with 3 Cheeses and Chives {50 Women in Food: #35 Delia Smith}

February 17, 2012

Mary of One Perfect Bite and some other women food bloggers (including myself) are blogging our way through the 50 Women Game Changers In Food published by Gourmet in May ’11. Some of the women on the list you will know, others you may not, but either way, this will be a great 50 week journey to learn more about these women that inspire the way we think about food today.

Please visit Mary at One Perfect Bite, Val at More Than Burnt Toast, Joanne at Eats Well With Others, Taryn at Have Kitchen Will Feed, Susan at The Spice Garden, Claudia at A Seasonal Cook In Turkey, Heather at Girlichef, Jeanette at Jeanette’s Healthy Living, Katie at Making Michael Poland Proud, Sue at The View From Great Island, Barbara at Moveable Feasts, Nancy at Picadillo, Mireya at My Healthy Eating Habits, Veronica at My Catholic Kitchen, Annie at Lovely Things, Claudia at Journey of an Italian Cook, Alyce at More Time at the Table, and Amrita at Beetle’s Kitchen Escapades  for their tributes to these 50 women.

Delia Smith has a beautiful website at Delia Online. What I love most are the quick links on the first page which include: menus, under 30 minutes, special diets, cooking for one and freezing. So who is Delia Smith? Delia has sold 21 million copies of her books in total. Her biggest selling book Delia Smith’s The Winter Collection(1995) sold 2 million copies in hardback and remains the biggest selling non-fiction title of all time. The website alone had tons of recipes to chose from, of which I decided on A Soufflé Omelette with Three Cheeses and Chives. This recipe can also be found in Delia’s How to Cook: Book One.

Flaxseed Crackers
Have you ever made your own crackers? I just did, thanks to Joy. I wasn’t too sure that I would be able to pull it off, but seriously, did you know that crackers are super simple to make? I’m not kidding. I had the dough resting in the fridge literally 5 minutes after I had the ingredients on the table. How were they? Let’s find out.

Chocolate Fudge Brownies w/ Chocolate Buttercream Frosting {Joy the Baker Spotlight}

A whole cookbook full of dessert and sweet treats….just for me. Well, not really just for me, but Joy the Baker just released her new cookbook and I recommend picking one up if you are into sweets as much as I am (stick around at the end of the post for Heather’s interview with Joy and a chance to win a copy of her book!). I couldn’t turn this one down. Through the efforts of Hyperion and Girlichef, I (along with 20+ other bloggers) am able to review this book and make a few recipes. I’m not sure how on Earth Heather picked the recipes we would be featuring, because I had a tough time picking for the bloggers choice week (jury may still be out). There are tons of treats I want to try in this cookbook, so this series may not be the last you’ll see from the Joy the Baker.

The Valentine’s Dinner That Scored! How to Create a Restaurant Meal at Home

February 15, 2012

Get your mind out of the gutter. By scored, I meant it was really great!

I opened a restaurant last night. Miranda’s Cocina. “Cocina” means kitchen in Italian. No, I’m not italian, but I made a pasta dish for the main course so I thought it was fitting. Here is the breakdown of our opening night Valentine’s dinner.

What You Need to Know About Chocolate – In 3 Minutes or Less

Swiss Chocolate (bon bons)
Source

With Valentine’s Day being tomorrow I figured that it would be very fitting to talk about the very thing we women seem to crave more around this time. Chocolate. So what is it about this Hallmark holiday that makes us go nuts over this cocoa concoction? Here is everything you ever wanted to know about chocolate in two minutes or less.

Is it Really and Aphrodisiac?

Yes, I went there. Very à propos if you ask me. This is probably the question on the minds of many significant others this time of year, so I figure I had better put it out there. Scientifically speaking, there is no known proof that chocolate is an aphrodisiac. Yeah, I know. So where did all of the hype and the rumors come from? Well, the neurotransmitters serotonin and anandamide both contribute to feelings of happiness and euphoria during sex – and both are found in chocolate. Tricky, tricky! But the way I see it, when good chocolate is involved in Valentine’s Day, someone’s getting lucky.

Eggs Basin Street

You’ve gotta love New Orleans. Been there or not. Heck, parts of the country hold their own Mardi Gras or Fat Tuesday celebrations, so that just shows you what a big part the ‘bayou’ plays in our culture. Jambalaya, Gumbo, red beans and rice. There are some great dishes that come out of New Orleans. Ella Brennan is hailed as the Queen of New Orleans cuisine. I was excited to cook this week. So many great choices, but I went with a classic…with a little bit of a twist.

In her cookbook, The Commander’s Palace New Orleans Cookbook, Ella says of Red Beans and rice:

“We never put red beans and rice on the menu because it was such a homestyle dish.
But since it is such a divine combination, we decided to try it with eggs.
Poached eggs are placed on rice fritters and sauced with creamy red beans, spiced with onion, garlic, andouille, and Louisiana Red Hot sauce.”

Well, you’ve got me. I’ll give it a go – it sounds delicious.

Bay-Scented Chicken with Figs

There are not a lot of times that I have writer’s block and can’t come up with anything to say. This is one of those times. That being said, I would hate for that to get in the way of learning about these two great women. Who doesn’t love to eat local and fresh? That is where Ryder and Topalian come in. Edible Communities, a publishing and information services company that creates editorially rich, community-based, local-foods publications in distinct culinary regions throughout the United States and Canada was founded by Tracey Ryder and Carole Topalian in 2002. Please visit the website to find out more.

The first time I was introduced to Joy Bauer’s Slim and Scrumptious Cookbook, I thought it would be just another “light cooking” cookbook with okay recipes. Just in case you missed them, go back and take a look at my blog posts featuring two of the recipes I decided to profile (click photos for links to posts):

Caramelised Pear and Rocket Salad

Where have I been that I have no idea who this Donna Hay person is? I mean seriously? Former food editor of Marie Claire, editor of Donna Hay Magazine, 18 award-winning cookbooks, the Donna Hay General Store, a houseware line and a food line. Her magazine is even available in the app store. She’s like the Australian version of our Martha Stewart. Maybe that’s it. I don’t live in Australia. Is that excuse enough? Probably not, but that’s what I’m going with.

Homemade Doughnuts So Good, You’ll Slap Your Momma

Lemon and Sour Cream Doughnuts

Is there anything better than a fresh, warm doughnut? Not for someone with a sweet tooth like me! The problem is that once you make a fresh batch at home, you are tortured every time you walk by them – they call your name. What? Your doughnuts don’t speak? Mine do. Until they are all gone. That is how I make them stop talking.

Seafood Stew – Good For You and Chocked Full of Taste

Brazilian Seafood Stew

I am a sucker for anything with coconut milk and lime juice. Why, I’m not sure, but you could argue it’s the Islander in me. Case in point my latest Thai Inspired Chicken Noodle Soup, and when I saw this recipe in Joy Bauer’s cookbook Slim & Scrumptious, I had to try it. The first recipe I tried from this cookbook was last week’s Chicken Fettucine Alfredo with Sun-dried Tomatoes. Simply awesome. As for this stew, if slim is always as good as what I have experienced so far, bring it on!

Between 1986 and 1997, Barbara Tropp ran a very successful Chinese restaurant named China Moon Cafe in a 1930s era coffee shop in San Francisco. Similar to Chez Panisse in Berkeley, China Moon Cafe drew foodies from around the world who came for the unique combination of California cuisine infused with a deep knowledge of another traditional food culture. The late San Francisco restaurateur was noted for her careful, detailed recipes, leading the San Francisco Chronicle to dub her the “Julia Child of the Chinese kitchen.”

Light Done Right: Chicken Fettuccine Alfredo with Sun-dried Tomatoes

Chicken Fettuccini Alfredo

Creamy Alfredo. It doesn’t have to be laden with fat and calories to be delicious. Take my previous light Alfredo recipes for a spin if you don’t believe me. Joy Bauer makes this evident with this delightful recipe from her cookbook Slim and Scrumptious. Joy Bauer is a regular on the Today Show as the resident nutrition expert. She is also the author of multiple best-selling books about weight loss, diet and healthy eating, and I had the chance to receive and review a copy of her latest cookbook and her new Food Cures (#1 New York Times Bestseller).

Mac and Cheese Quest: Apple-Sausage Mac and Cheese

I never thought I would meet a mac and cheese that I didn’t love. I could probably say I didn’t like it that much. Sorry. I feel betrayed. All of that good gooey cheese, ritz crackers, apple -sausage, just begging to come together to make something great. Fail. Epic. First of all, this recipe...

Emeril’s Best Ever Mac ‘n’ Cheese Challenge {Mac and Cheese Quest}

  This recipe comes from a challenge that Emeril Lagasse conducted with ABC’s Good Morning America, and the winning recipe was from Laura Macek. I adjusted the recipe slightly because of what I had available, but the end result was culinary magic. The roasted garlic was understated, but it added a depth that was...
